- Cocoa powder

- Coconut flour

- Baking powder
- Monk fruit or White sugar
- Flaxseed meal
- Coconut oil

How to Make Gluten-Free Baked Chocolate Donuts
Preheat your oven to 320F / 160C. Prepare your donut pan by spraying it with a baking spray.
In a bowl large enough for all of your ingredients, mix the flaxseed meal and water together and let sit for 5 minutes to become gelatinous.
Add the cocoa powder, almond milk, baking powder, monk fruit (or sugar), coconut oil, and vanilla extract into the bowl and stir to combine.
Then add the coconut flour and almond flour to the bowl. Stir again.
Use a spoon to scoop the donut dough into your donut pan. A wet spoon will help if it’s sticky. Fill them almost to the top of the molds, leaving a little space for them to raise.

Bake for 15 minutes. Then let them cool before removing from the pan.
While the donuts are cooling, you can prepare your glaze by gently melting the chocolate together with the coconut oil on the stovetop or in the microwave.
Dunk the top half of the donuts in the chocolate mixture.

Like most donuts, these gluten-free vegan chocolate donuts can be stored in an airtight container at room temperature for 2-3 days or in the refrigerator for 5 days. With that said, I always prefer the taste of freshly baked donuts!
When storing stacked donuts, place a sheet of parchment paper between each layer to prevent the glaze from sticking to the bottom of the donuts on top.
Can You Freeze Gluten-Free Vegan Chocolate Donuts
Yes, you can! You can further extend the storage life of these donuts by freezing them for 1-2 months. Thaw them at room temperature and enjoy!
If you are worried about how the glaze will withstand the freezing and thawing process, you can also store your donuts unglazed in the freezer and then simply add the chocolate glaze just prior to serving.
