Gluten-Free Chocolate Donuts

Ingredients

Chocolate glaze:

  • ½ cup dark chocolate
  • 1 tablespoon coconut oil

Instructions

  • Preheat your oven to 320F / 160C. Prepare your donut pan by spraying it with a baking spray.
  • In a bowl large enough for all of your ingredients, mix the flaxseed meal and water together and let sit for 5 minutes to become gelatinous.
  • Add the cocoa powder, almond milk, baking powder, monk fruit (or sugar), coconut oil, and vanilla extract into the bowl and stir to combine.
  • Then add the coconut flour and almond flour to the bowl. Stir again.
  • Use a spoon to scoop the donut dough into your donut pan. A wet spoon will help if it's sticky. Fill them almost to the top of the molds, leaving a little space for them to raise.
  • Bake for 15 minutes. Then let them cool before removing from the pan.
  • While the donuts are cooling, you can prepare your glaze by gently melting the chocolate together with the coconut oil on the stovetop or in the microwave.
  • Dunk the top half of the donuts in the chocolate mixture.

Notes

Add sprinkles or crushed nuts to your donuts for a little something different. Alternatively, you could make a salted caramel glaze by combining ½ cup peanut butter, 1 tbsp coconut oil and ⅓ tsp salt.
