Preheat your oven to 320F / 160C. Prepare your donut pan by spraying it with a baking spray.
In a bowl large enough for all of your ingredients, mix the flaxseed meal and water together and let sit for 5 minutes to become gelatinous.
Add the cocoa powder, almond milk, baking powder, monk fruit (or sugar), coconut oil, and vanilla extract into the bowl and stir to combine.
Then add the coconut flour and almond flour to the bowl. Stir again.
Use a spoon to scoop the donut dough into your donut pan. A wet spoon will help if it's sticky. Fill them almost to the top of the molds, leaving a little space for them to raise.
Bake for 15 minutes. Then let them cool before removing from the pan.
While the donuts are cooling, you can prepare your glaze by gently melting the chocolate together with the coconut oil on the stovetop or in the microwave.
Dunk the top half of the donuts in the chocolate mixture.
Notes
Add sprinkles or crushed nuts to your donuts for a little something different. Alternatively, you could make a salted caramel glaze by combining ½ cup peanut butter, 1 tbsp coconut oil and ⅓ tsp salt.
