Homemade Strawberry Lemonade Popsicles
On a hot summer day, there’s nothing I like better than the refreshing taste of a Strawberry Lemonade Popsicle; it’s instant delicious cooling. The flavor balance is perfect, using fresh, juicy, ripe strawberries and lemons. They’re perfect for lazy days on the deck, family gatherings, or kids’ parties.

As soon as strawberries come into season, I start batching homemade popsicles. They are so easy to make, and the kids can help, too. Make a big batch, store them in your freezer, and you’ll have popsicles for the summer. They make a great snack and the perfect healthy summer dessert.
The great thing is that you can customize the flavor and even the shape using some great molds. Kids love the fun molds; you can go more traditional with these reusable silicone molds, or these reusable freezer tubes.

How to Make Strawberry Lemonade Popsicles with Step-By-Step Instructions

Making popsicles is an annual ritual for me, and I’ve fine-tuned the recipe so you can enjoy them at home, too; just follow the steps below.
Prepare the Strawberries
First, wash and chop the strawberries into small pieces and add them to a blender. If you’re using frozen strawberries, let them thaw a bit for easier blending.
Make the Sugar Water
In a separate bowl, mix the granulated sugar and water until the sugar is completely dissolved. Using warm water can help dissolve the sugar faster. Juice the lemons to obtain the required amount of fresh lemon juice.


Blend Everything Together
Pour the sugar water into the blender with the strawberries and add the fresh lemon juice. Blend everything together until smooth, and the strawberries are fully blended. Before freezing, taste the mixture—if you prefer it sweeter, add more sugar.


Fill the Popsicle Molds
Next, pour the blended mixture into popsicle molds. If your molds have lids, place them on and insert the popsicle sticks, leaving about an inch sticking out. If your molds don’t have lids, cover them with plastic wrap or aluminum foil and insert the sticks through the wrapping. I always use silicone molds as they make it easier to remove the popsicles without breaking them.


Freeze the popsicles for at least 6 hours or until they’re fully frozen. Making them in the evening means that they’re ready to enjoy the next day.
Remove from Molds
When you’re ready to enjoy, gently push the base while pulling the stick to remove the popsicles from the molds. If needed, dip the mold tips in hot water for 10 seconds to help release them.

- Fresh vs. Frozen: You can use either fresh or frozen strawberries. If using frozen, let them thaw a bit before blending for a smoother consistency.
- Sweetness: Adjust the sugar to your taste. If you like it less sweet, start with ¼ cup of sugar and taste the mixture before freezing. You can always add more if needed.
- Lemon Juice: Freshly squeezed lemon juice gives the best flavor. Bottled lemon juice can be used in a pinch, but it might not be as vibrant.
