Cool off this summer with homemade strawberry lemonade popsicles which are so easy to make. The natural sweetness of strawberries and the bright flavor of lemon juice are perfectly combined. Batch-make them and store them in the freezer so you have them whenever needed. Perfect as a snack or a cool, refreshing summer dessert.
Wash and chop the strawberries into small pieces. Add them to a blender.
2 cups strawberries
In a separate bowl, mix sugar and water until the sugar dissolves completely. Pour it into the blender with strawberries and add lemon juice.
½ cup fresh lemon juice, ½ cup granulated sugar, 1 ¾ cups water
Blend all the ingredients together until the mixture is smooth and the strawberries are fully blended.
Pour the blended mixture into popsicle molds.
If your molds have lids, place them on and insert the popsicle sticks, leaving about 1 inch sticking out. If your molds don't have lids, cover them with plastic wrap or aluminum foil and insert the popsicle sticks through the wrapping.
Freeze the popsicles for at least 6 hours or until fully frozen.
To remove the popsicles from the molds, gently push the base while pulling the stick. If needed, dip the mold tips in hot water for 10 seconds to help release the popsicles.

*To get fully translucent popsicles (no seeds) strain through a fine mesh sieve.Store frozen in bags or wrapped in plastic for up to 1 month.
