Ingredients
  

  • 12 lettuce leaves
  • ½ can black beans
  • ½ can sweet corn
  • ½ red onion
  • 1 ripe avocado
  • 2 tomatoes
  • ¼ cup vegan mayonnaise
  • 1 tbsp olive oil
  • Juice of half lime
  • ½ tsp salt
  • A few cilantro leaves chopped

Instructions
 

  • Wash your lettuce leaves, being careful not to tear them.
  • Chop up the tomatoes, onion and avocado.
  • Place all of the ingredients except for the lettuce leaves and cilantro into a bowl. Stir to combine.
  • Spoon the mixture into your lettuce leaves, and sprinkle the chopped cilantro on top.

Notes

You can also sprinkle chilli flakes on top if you like a bit of spice.
Bibb, romaine or Boston lettuce leaves are best for this recipe.
This recipe should make around 12 wraps.
