Ingredients
 
 

  • 2 cups apple juice
  • 2 cups white sugar
  • 1 lemon juiced
  • 2 tablespoons corn syrup
  • 2 tablespoons maple syrup

Instructions
 

  • Add apple juice and sugar to a cold saucepan and stir. Bring to medium heat, stirring constantly until well dissolved.

  • Once sugar dissolves, reduce heat and bring to a simmer. Cook for about 15 minutes, or until it reduces by half.
  • Add the lemon juice, corn syrup, and maple syrup, and cook for 2-3 more minutes.

  • Store in an airtight container.

Notes

  • Sugar Swap: While granulated sugar creates a classic golden hue, feel free to experiment with brown sugar for a richer flavor and darker color. Just remember, brown sugar tends to caramelize faster, so keep a close eye on it while simmering.
  • Crystal Clear Solution: If your vegan honey crystalizes slightly during storage, don’t panic! Simply place the container in a warm water bath and stir gently until the crystals dissolve.
  • Fresh is Best: For the brightest lemon flavor, use freshly squeezed lemon juice. Bottled juice can add a slightly bitter taste.
  • Cool it Down: Let your vegan honey cool completely before storing it in an airtight container. This will prevent condensation and ensure it thickens properly.
  • Fridge is Your Friend: Store your homemade honey in the refrigerator for up to 2 weeks. The cooler temperature helps maintain its consistency and prevents spoilage.
