In a large mixing bowl, whisk the flour, cornmeal, sugar, salt, and baking soda until well combined. For a gluten-free version, use a 1:1 gluten-free flour blend for best results, and avoid overmixing to keep the casserole moist.

Blend the Corn Mixture

Combine Wet and Dry Ingredients
Add the blended corn mixture to the dry ingredients and stir just until combined. Avoid overmixing so the casserole remains soft and fluffy.
Then, fold in the remaining 1½ cups of whole corn kernels using a silicone spatula so they’re evenly distributed throughout the batter.
Air Fry Until Golden
Pour the wet ingredients into the dish, smooth it out, and air fry at 350°F (180°C) for 25–30 minutes until the top turns golden and a toothpick comes out clean. If your air fryer runs hot, check it at 23 minutes to prevent over-browning.

- Check your air fryer size: Use a 6-quart air fryer for a 9×13-inch dish. If yours is smaller, select an 8×8-inch dish and cut the cook time by 3–5 minutes.
- Adjust sweetness to taste: For a more savory casserole, use 2 tablespoons of sugar; for a sweeter one, go up to ⅓ cup.
- Don’t skip the blending step: Blending half the corn with yogurt and butter makes a creamy, custard-like base that holds the casserole together without eggs.
- Avoid overmixing the batter: Mix just until everything’s combined. Too much stirring can make the texture heavy instead of soft.
- Test for doneness with a toothpick: Insert it into the center. It should come out clean or have a few moist crumbs, but no wet batter.
