Halve the avocados, remove the pits, and peel. Slice each half into 8 wedges, depending on size, ensuring they're thick enough to hold up during cooking.

Set up three separate bowls. Add flour to the first shallow bowl. Pour the soy milk into another shallow bowl. Combine the panko breadcrumbs with salt and pepper in a third shallow bowl.

Coat each avocado slice in the flour mixture, shaking off excess. Dip next into the soy milk, ensuring full coverage.
Finally, coat thoroughly with the panko breadcrumbs, pressing gently to adhere.
Place the breaded avocado slices in a single layer in the air fryer basket, avoiding overlap. Depending on the air fryer size, you may need to cook in batches.
