Chickpea Burgers

Ingredients

  • 1 15-oz can chickpeas rinsed and drained
  • ½ cup red onion finely diced
  • ½ cup oats
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 4 burger buns

Optional Toppings:

  • Tomato slices
  • Lettuce leaves
  • Mustard
  • Fresh cilantro

Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Place the chickpeas in a medium bowl and mash with a potato masher until mostly broken down. A few whole chickpeas are fine.

  • Add the red onion and oats, then continue mashing.

  • Stir in the garlic, oregano, salt, and pepper. Mix until the mixture is well combined and slightly sticky. If needed, add 1–2 tablespoons of water.

  • Shape the mixture into 4 patties and place them on the prepared baking sheet.
  • Bake for 20 minutes, flip, then bake for another 15 minutes until golden and firm.
  • Serve on buns with tomato, lettuce, mustard, and cilantro.
