Ingredients

  • 1 tablespoon olive oil
  • 2 garlic cloves minced
  • 1 sweet onion diced
  • 12 ounces soft tofu block
  • teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper

Instructions

  • Preheat the oven to 355°F/180ºC.
  • Heat a non-stick skillet to medium-high and add the olive oil. Once it is hot, add the onion and garlic and cook for 5-7 minutes.
1 tablespoon olive oil, 2 garlic cloves, 1 sweet onion
  • Add the paprika, garlic and onion and mix everything well.
1½ teaspoons smoked paprika, 1 teaspoon garlic powder, 1 teaspoon onion powder
  • Press the tofu to remove all the liquid possible, cut it in small pieces (or break it in crumbs) and combine with the previous mixture.
    12 ounces soft tofu
  • Add everything to a food processor and process until smooth.
  • Line a small loaf pan with parchment paper. Transfer the mixture to the prepared pan and press it down.
  • Bake for 25 minutes, flip it over and bake for 15 more minutes. Remove from the oven and let it cool before slicing and serving.
  • Serve and enjoy your Vegan Spam!

Notes

  • Tofu Type Matters: Use a soft block of tofu for this recipe as it blends well and gives the right texture. If you prefer a firmer texture, extra-firm tofu can also be used.
  • Spice It Up: Feel free to adjust the spices according to your taste. Adding a bit of cayenne pepper can give it a nice kick.
  • Smokiness: To amp up the smoky flavor, add a teaspoon of liquid smoke to the mixture before blending it.
  • Pressing Tofu: Properly pressing the tofu is key. The less moisture in the tofu, the better it will hold its shape and absorb flavors.
  • Can I make this recipe without a food processor? While a food processor makes it easier to achieve a smooth texture, you can also mash the ingredients together in a bowl using a fork or potato masher. The texture will be more rustic but still delicious.
  • How do I know when the vegan spam is cooked through? It should be firm to the touch and slightly golden on the outside. Letting it cool will further help it firm up.
