Ingredients
  

  • 2 tbsp coconut oil
  • cup almond milk
  • 1 tsp vanilla extract
  • ¼ cup of monk fruit or ½ cup white sugar
  • 2 cups almond flour
  • cup coconut flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 3 tbsp cocoa powder
  • cup dark chocolate chips

Instructions
 

  • Preheat the oven to 325ºF (160C). Line a baking sheet with baking paper.
  • In a  bowl, add the coconut oil, almond milk, vanilla extract and monk fruit. Whisk to combine.
  • Then add all of the other ingredients apart from the chocolate chips. Stir until combined.
  • Fold in the chocolate chips.
  • Make balls with the dough in your hands and press them down onto the baking sheet, using your hands or the back of a spoon to flatten them gently. Spread a few more chocolate chips on the top of the cookies.
  • Bake until the cookies are firm around the edges, about 25-30 minutes. Cookies will get firmer once cool.
