No-Bake Mini Vegan Cheesecakes: gluten-free, dairy-vegan, and completely vegan-friendly bites of creamy heaven!

Ingredients

- Coconut Oil - Coconut Milk - Berry Jam

- Walnuts - Dates

- Raw Cashews - Maple Syrup - Vanilla Extract - Lemon Juice

Add the nuts into a food processor or high powered blender. Process into a meal/flour consistency.

Prepare the Crust

Add the dates and process until you have a dough that sticks together. Then, scoop  1 heaped tablespoon of the crust mixture into your muffin pan and press it down.

Add all of the filling ingredients except for the jam into a blender and blend until smooth.

Divide the filling evenly between the muffin molds. Remember to leave room for the jam topping!

Fill in the moulds

Add the jam on top of the creamy filling. After, cover your muffin pan with plastic wrap and freeze until hard.
