Ingredients

  • 1 pizza base see recipe above if making your own
  • ½ cup diced yellow pepper
  • ½ cup fresh corn
  • ½ cup pickled jalapenos
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • ¾ cup black beans
  • cup marinara sauce
  • Vegan sour cream or ranch for topping optional
  • Avocado for topping optional

Instructions

  • Preheat your oven to 400°F (200°C)
  • Prepare your vegetables - dice the yellow pepper, and cut the corn off the cob
  • Combine the black beans and spices and make sure they're evenly coated
  • Spread the marinara sauce over the pizza base
  • Top with black beans and vegetables
  • Bake on a pizza stone for 1-15 minutes, until the crust starts to turn golden & crispy
  • Top with dollops of vegan sour cream, ranch dressing, or fresh avocado

Notes

If making your own pizza dough, you'll need to allow at least an hour for it to rise.
You can also use refined beans for this recipe - simply mix in the spices, and spoon it onto your base, then lightly spread it over the marinara sauce.
