Air Fryer Carrot Fries with Aioli Dip

Air Fryer Carrot Fries are my go-to when I want a fun, healthy alternative to regular fries. The air fryer makes them crispy outside while keeping them tender inside, the Cajun seasoning adds kick, and the nutritional yeast creates savory notes. The creamy garlic aioli ties everything together. I make them for weeknight dinners, game day snacks, burger nights, and veggie sides because they're crowd-pleasing and so flavorful. Leftovers keep in the fridge for up to 3 days.

Ingredients

Carrot Fries

  • 1 pound 450g carrots
  • 1 tsp cajun seasoning
  • 1 tbsp olive oil
  • 1 tbsp nutritional yeast
  • 1/2 tsp salt
  • 1/2 tsp ground pepper

Vegan Aioli Mayonnaise

  • 1/3 cup vegan mayonnaise
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 1/4 tsp salt

Instructions

  • Preheat Air Fryer to 400F (200C)
  • Peel the carrots and remove tips. Cut into fries.
  • Mix olive oil and seasonings in a large bowl.
  • Add carrot fries and stir to coat evenly.
  • Cook carrots in the Air Fryer for 15 minutes. Make sure they don't overlap (you may have to make them in batches).
  • Blend the aioli ingredients together.
  • Serve and enjoy!

Notes

Here are my best tips for making perfect air fryer carrot fries every time.
  • Cut evenly: Make sure all your carrot fries are about the same thickness so they cook at the same rate and you don't end up with some burnt and some undercooked.
  • Don't skip preheating: Preheating your air fryer for a few minutes before adding the carrots helps them crisp immediately rather than steam first.
  • Work in batches if needed: If your air fryer is on the smaller side, cook the carrots in two batches so they don't overlap and get crispy all over.
  • Shake for extra crispiness: You don't have to shake the basket halfway through, but if you want fries that are crisp on all sides, give them a quick shake at the 8-minute mark.
  • Make the aioli ahead: The garlic aioli tastes even better if you prepare it an hour or two before serving, as the flavors have time to blend.
  • Reheat properly: If you're reheating leftover fries, use an air fryer instead of a microwave so they crisp back up rather than becoming soggy.
